A hot water dispenser is a small water-heating tank, measuring about ˝ cubic foot, which is installed underneath a kitchen sink. The tank is attached to a spout and handle that rises above the counter, providing water of up to 200 degrees Fahrenheit in just seconds. Why should you care?

Number of handles
Single Handle – A single handle model can only act as a hot water dispenser. Some models, such as the Franke LB100, provide filtered hot water, but no single handle model dispenses cold water as well.
Two-Handle - In a two-handle model, one handle controls the hot water while the other handle manages the cold water. A two-handle dispenser usually comes with a filter so that you can have cold drinking water at your disposal. The Insinkerator HC1100* and the Frank LB200 are the best and most popular models on the market. Two-handle dispensers are ideal for keeping cooking and drinking water separate from the general faucet.

NOTE: If you have young children, we strongly suggest that you consider purchasing a hot water dispenser with a safety lever. This makes it more difficult to turn the dispenser on and thus helps prevent children from scalding themselves.
Spout type
The spout is the faucet component that delivers water to the sink. Hot water dispensers are available in a variety of spout types. The two most popular options are a gooseneck spout and a European-style spout.
Gooseneck – High arching spout that is ideal for filling large pots.
European– A more attractive and decorative spout that is ideal for filling small mugs and pots.
The tank
Tanks are available in a variety of sizes and heating capacities. And in this case, size does matter. The larger the size of the tank, and the more wattages it can use to heat, the more cups of hot water that your dispenser will be able to serve per hour. Most hot water dispensers carry 1/3 or ˝ gallon tanks with anywhere from 500 to 1300 watts. A 750-watt, ˝ gallon tank is generally considered suitable for a family of four. It can deliver up to 60 cups of hot water per hour.
Temperature control
New hot water dispensers are usually built with an adjustable temperature control that can be set anywhere from 140 to 200 degrees Fahrenheit. This is done to provide flexibility in the ways that one can use the hot water dispenser. This control also acts as a safety mechanism. It is unsafe to always keep water set at high temperatures such as 190 or 200 degrees Fahrenheit because it can cause third degree burns in the blink of an eye.
Color (finish)
Most hot water dispensers come in a variety of colors and finishes to match your kitchen decor. Interestingly, while chrome is the most durable, it's also the most affordable. Alternative coatings are substantially more expensive. Different manufacturers tend to supply different finishes and colors. Some of the finishes that dispensers are available in are as follows:
