According to the manufacturer, if the interceptor is to be installed on the floor below the sinks or whatever else is supplying the interceptor, a few adjustments need to be made. First of all, it is recommended that 2 flow controls be installed. 1 at the top of the vertical drop and one on the horizontal pipe at the bottom of the drop. Second, we recommend that a stretch of horizontal pipe be used upstream of the interceptor but after the vertical drop to allow the water to slow down and become less turbulent after the drop. This horizontal pipe should at least be the length of the drop but will actually help the interceptor work more efficiently if it is longer than this.
It appears they require some sort of a concrete box around the grease trap, but you will likely need to check with a local official to get the specifics.
