I was having issues with the pilot staying lit and figured the issues was likely the thermocouple. When I pulled out the existing unit the burner assembly looked a bit crusty so I decided to replace the whole burner assembly. The unit showed up sooner than expected and matched perfectly. It was a quick 10 minute job including finding the tools to do it. The water heater has worked flawlessly ever since.

Pilot and flame continued to go out, appears as if no air in the chamber. I cleaned out the screen and it would fire up for a day then go out again. I ordered the burner assembly and haven't had an issue since. My understanding is that the new burner increased the thermostat coupler from 180C to 200C.
