I like the long sweep curve
i really like these SS smooth sweep elbows. especially if going in walls. i'm no Fluids engineer but the longer 90 sweep curve seems like it should allow more laminar flow. Plus can clampdown with fewer concerns.

Probably stay plastic fittings
Casting powder inside fitting not sure if it will flush out but probably not great to have in water supply

Strong stainless fittings
Peace of mind over the poly elbows for a reasonable up charge. . Radius is a bit bigger. Stainless for the acidic well water brass or copper eat after a few years.

Your SS slow 90° pex-a are the best.
I don't like using 90° pex fittings at all, just bend the pex-a from one place to another. But every once in a while I need to use a 90°. Your SS 90's slow turn don't slow down the water flow at all. I highly recommend them in places where you just have to use them.
