Simplicity without electronics, but beware of QC issues
Being a critical safety component, I tested it in an electric kettle full of water with an external thermometer immersed. The first one failed to interrupt the circuit well beyond its 190 F set-point and after extended immersion in boiling water. I sent it back. The next one passed the test. I bought two more (I have 3 boilers) and all 3 passed the test. The fact that this is a simple mechancal device is a great advantage, however, a failure rate of 25% in an admittedly small sample of 4 is problematic. If you buy one, be sure to test it before installing.
