Yes the mats can be installed under tile in a shower. I am not sure about combining two on a single thermostat.
Electricity in the shower is never a good idea. I would not install inside the shower. If you want heat in the shower use a steam system. You can attach mats to each other in specific ways. You can install Suntouch mats beneath carpet, but the mats must be embedded in a cement-based or gypsum-based mortar.
