Yes you can replace the 1F81-51 with this 80 series. Both units work for gas furnaces and Air conditioning. I also replaced my 1F81-51 with this unit.
You can reset the thermostat by removing the wires from terminals R and C (do not short them together) and removing batteries for 2 minutes. After resetting the thermostat, replace the wires and batteries. To reset the programming, clock and configuration settings, press the up and down buttons and the FAN button simultaneously. The thermostat should go blank and then all segments will be displayed momentarily. You can find all of this information in the Installation Manual under the Manuals tab on the product page at our website.
You can reset the programing (default settings) by first going to the menu mode. It will say menu and where the FAN button is located, it will say "Run". Press the Up arrow, the Down arrow, and the Fan button (Run) simultaneously until all the LCD displays are visible. You have just reset the programming. The instructions left out the part about being in the menu mode.

White Rodgers recommends 1F97-1277 as the replacement, but 1F80-0471 is a also a single-stage, 2-wire thermostat. We see no reason why it wouldn't also work.
The manufacturer recommends 1F97-1277 as the replacement for the obsolete 1F97W-71 thermostat.
1F80-0471 is the manufacturer's suggested replacement for 1F80-261. The wiring should be similar, but we could not say for sure whether it's exactly the same.
The thermostat would not be wired directly to the zone valves. You would need to wire it to a zone valve controller.
