Of course, you need to find out first what size your health department requires for your size sink, and even the products you're producing may figure into how much grease you need to handle. Be sure to get a definite size decision from them first. I had an expensive replacement and a delayed store opening, because one inspector told me a smaller trap would be right, and then the inspector who actually did the final inspection made me get a bigger one, instead.
