A single pole thermostat only breaks one side of the circuit, this allows power to be present at all times. a double pole thermostat breaks both sides of the circuit, all and completely shuts power to the valve when off. a double pole thermostat commonly has an OFF position while a single pole doesn't. A double pole is also a safer option since it completely cuts power when there is no call for heat.
