No, you don't need a specific brand of PEX tubing for this manifold. I use Rifeng when available, and have had good results.
There are no adapters to do this with for compression MANABLOCs, but there are combination compression MANABLOCs available that have some 1/2" ports and some 3/8" ports.
There are Viega Manifolds that provide both 1/2" and 3/8" ports. Or you could use a Sharkbite 1/2 to 3/8 fitting.
You can connect 3/4" or 1" to the MANABLOC. You will need more volume for the sprinkler, so we would recommend either 3/4" or 1".
This would probably be beneficial, as PEX is not immune to cracking under freezing conditions if water is left in the lines.
