You need a copper fitting adapter (labeled 'FTG'). These fit inside of copper fittings as copper pipe does. Part WP02-16-12, for example, fits into a 1" fitting on one side and over 3/4" pipe on the other.
If such a fitting exists, I have not seen it. Why not just use a length of cleanly cut 1" pipe? It is going to be invisible in your application anyway.

If you are putting a cap on the end, pex supply has fitting end caps. Forget the couplings and install a fitting End cap on the tee. walter
It is called a 1” x ¾” Fttg x C Coupling. Fitting means that the 1” is the same OD as the pipe.
This coupling slides over copper pipe on each side.
The "C x C" stands for cupped by cupped meaning that each pipe is inserted into the coupling and sweated into place.
